Development and characterization of gliadin bio film

Wheat gluten has been studied to develop the bio friendly films for for food packaging due to its unique properties, easy degradability after use and large availability at low costs. The wheat gluten is a mixture of complex protein molecules that can be seperated into glutenins and gliadins. Gliadins with glycerol was well known materials to make gluten films having reasonalbly good mechanical properties. Crosslinking agent may introduce to improve its physical properties. In this study, the effect of glutenins in alcohol/water based gliadins solution on the physical properties of gliadin bio films was studied by DSC, TGA, rheometer and UTM. It was found that glutenins in gliadins soultion resulted in the enhancement of mechanical and thermal properties of gliadin bio films.
